Poor Man's Husband Casserole

A hearty, budget-friendly comfort food casserole layered with tender egg noodles, creamy cheese filling, rich beef sauce, and melty cheddar cheese.

Ingredients
  

  • 12 oz wide egg noodles
  • 1.5 lbs ground beef
  • 1 medium yellow onion, diced
  • 3 garlic cloves, minced
  • 30 oz tomato sauce
  • 1 tablespoon Italian seasoning
  • to taste salt and black pepper
  • 8 oz cream cheese, softened
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese
  • as needed nonstick cooking spray

Instructions
 

  • Preheat the oven to 350°F (175°C) and lightly grease a 9x13-inch baking dish.
  • Cook the egg noodles in salted water according to package directions until al dente. Drain and set aside.
  • In a large skillet over medium-high heat, cook the ground beef and diced onion until browned. Drain excess fat.
  • Add the minced garlic and cook for 1 minute. Stir in the tomato sauce, Italian seasoning, salt, and pepper. Simmer on low for 10 minutes.
  • In a bowl, mix the softened cream cheese and sour cream until smooth and creamy.
  • Spread the cooked egg noodles evenly into the prepared baking dish.
  • Spread the cream cheese mixture evenly over the noodles.
  • Pour the meat sauce over the cream layer and spread evenly.
  • Sprinkle the shredded cheddar cheese evenly over the top.
  • Bake uncovered for 20 to 25 minutes until the cheese is melted and bubbly.
  • Let the casserole rest for 5 minutes before serving.

Notes

You can substitute ground turkey or chicken for a lighter version. Add red pepper flakes for a bit of heat. Store leftovers in an airtight container in the refrigerator for up to 3 days.
